ABSTRACT 
The method of controlling activity of galacturonic hydrolase to prolong mango hardness maintaining time is to soak mango in filming preservative comprising thiabendazole, chitosan and glycerin for preserving treatment before being stored at room temperature. The said method can delay PG enzyme acting time by over 5 days, delay protopectin and soluble pectin content varying time by 4-6 days, delay mango hardness lowering time by 10 days, maintain the mango hardness over 10 days, prolong the preserving period of mango and lower loss of mango during production and selling.
